Every Recipe Needs to Be Tested — a Lot
"We test [a recipe] out at different times, different temperatures, different ovens. Then after we do it, it gets sent out to people across America where their job is a recipe tester. They might live in Denver where you have different altitudes and your oven's going to work differently. Or they might be in Nebraska, where maybe you can't get a certain Thai ingredient as easily. You want everyone to be able to make everything. It's interesting to see what areas of the US don't have certain ingredients and where some recipes aren't working."
