Start by drizzling hot honey on a baking sheet with parchment paper. Arrange slices of jalapeño on honey. Grate parmesan and cheddar cheese. Cut puff pastry sheet into 4 even rectangles. Place one of the puff pastry rectangles on top of jalapeño pile and press down edges. Brush with egg wash.
