When YouTube sensation My Cupcake Addiction's Elise Strachan comes into our kitchen, we know something magical is about to happen! Combining the very best of our favorite funfetti addiction with soft, marshmallow-y Peeps is perhaps the tastiest way to celebrate Easter yet. So stay tuned to learn how to make the ultimate Easter candy cookie bar.
For the cookie layer:
1/2 cup unsalted butter, softened
4 egg yolks
1 15.25-ounce box yellow cake mix, like Betty Crocker
1/4 cup sprinkles
For the fudge layer:
1 14-ounce can sweetened condensed milk
3 1/2 cups white chocolate chips
1 1/2 teaspoons vanilla extract
3 packages Peeps
1/4 cup sprinkles
1/4 cup pastel M&M's
- To make the cookie layer: Preheat oven to 325ºF. Spray a baking dish with nonstick cooking spray.
- Using a hand mixer or stand mixer, beat butter on medium-high in a large bowl until soft and fluffy, about 2 minutes. Add egg yolks and egg, and beat until incorporated, about an additional 2 minutes. Add cake mix in 3 stages over low speed until fully incorporated, and then fold in sprinkles.
- Bake for 16-20 minutes, turning the dish halfway through the cook time, until the edges start to turn golden brown. Remove from the oven, and let sit until cooled.
- To make fudge layer: Fill a large saucepan with about an inch of water. Set a large heatproof mixing bowl on top, and add the sweetened condensed milk, white chocolate chips, and vanilla extract to the bowl. Heat on high, stirring occasionally, until the chocolate is melted and smooth. Remove from the heat and pour over the cookie layer. While the fudge is still wet, garnish with Peeps, sprinkles, and candy. Let cool completely, and cut into squares.
