zucchini & oyster mushroom fettucini
this came off the label to a bag of dried organic oyster mushrooms i used in a stir-fry, but i'm sure it would be just as lovely with fresh. here it is, lest i lose the recipe... and in case anyone else wants to try it, too! =)

Ingredients
- 2 T oil
3/4 # zucchini, sliced
1 onion, sliced
2 cloves garlic, crushed
1/2 oz. dried oyster mushrooms, rehydrated
8 oz. can peeled and chopped tomatoes
1/2 tsp. each dried basil and mint
1 tsp. turmeric
5 T sherry
2/3 c. heavy cream
1/2 # fettucine
Directions
heat oil. cook zucchini, onion, garlic and mushrooms in a covered saucepan over low heat. stir in the tomatoes, herbs, turmeric, and sherry. bring to a boil and simmer gently for 5 minutes. add cream and seasoning, simmer for 20 minutes. cook fettucine and serve zucchini and mushroom mixture on top of fettucine.
