this came off the label to a bag of dried organic oyster mushrooms i used in a stir-fry, but i'm sure it would be just as lovely with fresh. here it is, lest i lose the recipe... and in case anyone else wants to try it, too! =)

zucchini & oyster mushroom fettucini

Ingredients

  1. 2 T oil
  2. 3/4 # zucchini, sliced
  3. 1 onion, sliced
  4. 2 cloves garlic, crushed
  5. 1/2 oz. dried oyster mushrooms, rehydrated
  6. 8 oz. can peeled and chopped tomatoes
  7. 1/2 tsp. each dried basil and mint
  8. 1 tsp. turmeric
  9. 5 T sherry
  10. 2/3 c. heavy cream
  11. 1/2 # fettucine

Directions

heat oil. cook zucchini, onion, garlic and mushrooms in a covered saucepan over low heat. stir in the tomatoes, herbs, turmeric, and sherry. bring to a boil and simmer gently for 5 minutes. add cream and seasoning, simmer for 20 minutes. cook fettucine and serve zucchini and mushroom mixture on top of fettucine.
