Bake up a batch of low-calorie cookies with more than six grams of protein per serving. They taste like an oatmeal chocolate chip cookie, just healthier and more nutrient-rich!

Carob Chip Protein Cookie Recipe 2011-07-15 10:42:20

Ingredients

  1. 1 tablespoon almond butter
  2. 1/2 cup oats
  3. 1 scoop of protein powder (I used Sun Warrior vanilla protein)
  4. 1 egg white
  5. 2 packets of stevia
  6. 1/4 cup carob chips

Directions

  1. Preheat oven to 350ºF. Mix all ingredients together in a bowl with your hands, form into six balls, and place on a cookie sheet with parchment paper.
  2. Bake for about six to eight minutes.

I switched out pumpkin puree for the almond butter and honey for the sugar, and threw in a dash of cinnamon. So GOOD!

I just made these today. So good. But def use the chocolate powder. 3/4 cup peanut butter 1/4 cup honey 1 scoop chocolate or vanilla protein powder 1/2 cup raw oats Mix all ingredients together in a bowl and form into small 1" balls. Place in the fridge for a few hours and then enjoy.

This sounds great! I'd choose carob over chocolate anytime! I'm just wondering if the protein powder keeps it's properties when baked. I know there are certain types that can withstand heat, but how about the good ol' fashioned whey protein?
