Chef Elizabeth Falkner created a gyoza (dumpling) out of konnyaku, a Japanese yam. Reminiscent of mochi, the gelatinous dumpling had a rose-flavored center that complemented the macerated raspberries and Mexican wedding cookie crumbs.
