Carbon steel pans are some of my favorite to cook with. Especially when you can get a black- glass like non stick surface after seasoning the pan. I had a free night, so I'm going to bust these out while I'm home. The M'steel series have a thin beeswax coating that has to come off first. I'm going to soften the wax in a 200 degree oven, then wipe it clean with a paper towel. While the pan is warm and the steel has expanded ( opened up) I like to use flax seed oil because of how well it hardens as a surface. Coat the pan with a heavy coat of flax seed oil, a quarter cup or so, and then wipe it dry. Put the pan into a 500 degree oven for an hour, then turn the oven off and let the pan cool inside the oven. I like my cured pan really black and glossy. Super non stick. You may have repeat the steps once or twice for desired color. Stay tuned for final results.
