While the hotel had many restaurants, we chose to do a casual tasting menu by the beach bar, CoCoRum. The cuisine is Latin-inspired (and formally called Noche Latina), and you watch the chef cook right in front of you while also enjoying the amazing pink-sky sunsets (four courses for $85 per person). We also had a blast doing a rum cocktail tasting, which is part of an à la carte menu.
