Healthy Eggnog Smoothie

For the Love of Eggnog! Sip on a Vegan Smoothie Instead

I love the flavor, richness, and nostalgia associated with a tall glass of eggnog, but all that cream and sugar comes with a heavy caloric price tag. Now, you can enjoy a similar flavor and texture of the tradition with this healthy vegan smoothie. Hailing from Kris Carr's cookbook Crazy Sexy Kitchen, this recipe is low in calories and high in potassium and fiber, and due the addition of fresh nutmeg, Kris says it might help soothe a bellyache. It's truly the perfect light treat after an indulgent celebratory holiday meal, and if you choose to spike your glass with a little bit of bourbon, we won't tell.
