Quinoa-Stuffed Avocado

Ingredients
- For the dressing:
1 tablespoon lemon juice
1 tablespoon red wine vinegar
Pinch of oregano
- For the salad:
2 tablespoons thinly sliced carrot
2 tablespoons chopped red pepper
1/4 cup spinach
1/4 cup quinoa, cooked
1 avocado, halved and pitted
Directions
- Combine the lemon juice, red wine vinegar, and oregano in a small bowl and whisk until combined. Add the carrot, red pepper, spinach, and quinoa to the small bowl and mix until all the ingredients are tossed in the dressing.
- Set up your halved avocado on a plate, and scoop out extra flesh if necessary. Divide the quinoa salad, and spoon it into the center of each avocado half. Eat up!
