The heat from the oven can't possibly reach the bird when there is a giant metal barrier! The ideal pan to use is around 2 1/2 inches high. But, if you are determined to use the pan you have, here's how you can fake the height difference: place a muffin tin upside down on the bottom of the pan! This simultaneously lifts the turkey up and acts as a roasting rack hack, so all that glorious hot air can circulate around the bird.
