Kaffir Lime Aioli

Ingredients

  1. 4 kaffir leaves
  2. Juice and zest of 1 lemon
  3. 1/3 cup mayonnaise
  4. 1/2 teaspoon salt
  5. 1/4 teaspoon freshly cracked black pepper
  6. 1/4 teaspoon red pepper flakes
  7. 2 garlic cloves, minced

Directions

  1. Cut the center vein from each kaffir leaf, then coarsely chop. Add the lemon juice, zest, kaffir lime leaves, and mayonnaise to a food processor. Blend until no large pieces of kaffir lime leaf remain. Add the remaining ingredients, and blend until smooth. Pass the aioli through a fine mesh strainer, discarding any solids.

  1. 1/4 cup ketchup
  2. 1 tablespoon Sriracha
  3. 1 garlic clove, finely minced
  4. 1 teaspoon white vinegar
  5. 1/4 teaspoon freshly cracked black pepper

Directions

  1. Using a whisk, mix together all of the ingredients until smooth.

  1. 1/4 cup soy sauce
  2. 1 tablespoon water
  3. 1 tablespoon rice wine vinegar
  4. 1 tablespoon firmly packed brown sugar
  5. 2 tablespoons granulated sugar
  6. 1 teaspoon minced garlic
  7. 1 teaspoon minced ginger

Directions

  1. Combine all ingredients in a small saucepan set over medium heat. Cook, stirring occasionally, until the sugar is dissolved and the mixture has thickened enough to coat the back of a spoon.
