"Yesterday we f*cked up a cod about four times. It wasn't f*cked up, but it just wasn't the right flavor. For me, it takes a lot to love a white fish, especially a brothy white fish that's really simple. Everyone would try it and they'd be like 'This is amazing! This is so, so, so delicious.' But I just kept being like, 'No, let's try this, let's try this.' It's interesting because you're making the same thing all day, and my poor co-author, Adeena [Sussman], is writing everything down, like, this is it at four minutes, this is it at six minutes, this is it at seven. Everything has to be perfect — this book is forever."

Every Recipe Needs to Be Tested — a Lot

"We test [a recipe] out at different times, different temperatures, different ovens. Then after we do it, it gets sent out to people across America where their job is a recipe tester. They might live in Denver where you have different altitudes and your oven's going to work differently. Or they might be in Nebraska, where maybe you can't get a certain Thai ingredient as easily. You want everyone to be able to make everything. It's interesting to see what areas of the US don't have certain ingredients and where some recipes aren't working."

The Process Isn't as Easy as You Might Think

"The development process is by far the most difficult. The writing process is really easy and fun for me — I love doing that. Then, the photography part comes after that and you cook everything all over again with a food stylist to make it beautiful for the book. And then you look at your edits. It's not easy. It's bonkers. I never knew until we started."

Despite Her Busy Schedule, Chrissy Isn’t Slacking

"I actually always move Adeena [into our home]. I don't like to work through email. I don't feel passion resonates on the phone and things excite me in a different way in person. When she comes and really lives with us, our lives are food. That's why if you look at Snapchat right now, everything is food. It is tough because a lot of the times, I'm crawling around with the baby, too, and making sure I taste everything still. It's a process, but it's a fun one."
