This is a 13 pound organic turkey, flipped over breast side down. With sharp kitchen shears, it takes about 4 to 5 cuts on each side to remove the spine. The bones are soft. It's a lot easier than you might think. If this is something you don't want to do, then I'm sure the butcher at you grocery store/ Market will be happy to do for you. Don't forget, the reason we're doing this is cook time. By taking out the spine, I can cut the cook time down from 3 1/2 hours to an 1 1/2 hours at 375 degrees.
