We were just trying to decide if our favorite twist on Mexican conchas was the unicorn conchas, the conchas cake pops, or the ones stuffed with ice cream when these Mexican flag ones came into the picture.

Bakeries like El Bolillo Bakery in Houston and Mr. Natural in Austin, TX, are dusting green, white, and red food coloring over pan dulce to celebrate Mexico's Día de la Independencia on Sept. 16, and the result is a thing of beauty. Take a seat, grab a drink, and savor the beauty of these conchas.
