Shape your rice cereal treats into the shape of Minnie Mouse using your hands, a cookie cutter (there are tons online), or a shaping tool.
While your treats are setting up, pour warm, melted pink candy melts or dyed white chocolate into your bow mold. Place in the refrigerator to set your chocolate bows. Once your cereal treats are set, insert a popsicle stick into the top, between the ears.
Melt more pink candy melts or dyed white chocolate. Once your pink chocolate is a smooth, fluid consistency, dunk your treats almost all the way up to the ears, using the popsicle stick as a handle. Shake the treat to eliminate any drips, and lay flat on parchment paper to cool.
While the chocolate is setting, place five white M&Ms in two rows (like pictured) to create the polka dots.
Attach your cooled pink chocolate bow to the top with royal icing or a dollop of melted chocolate.
Once your chocolate is completely set, mist with the edible gold shimmer spray, roughly 18 inches away to give your treat a light dusting of iridescence.
