Sweet, spicy, and refreshing, this cooling soup blends a healthy array of hydrating produce like cucumbers and watermelon with fresh herbs and the right hit of spice that can help your metabolism soar.

Vitamin-C-rich jalapeños get their heat from the compound capsaicin that also works to boost your endorphin levels. Healthy Watermelon Gazpacho Recipe

Ingredients

  1. 6 plum tomatoes, chopped
  2. 2 cups cubed seedless watermelon
  3. 2 seedless or english cucumbers, peeled and chopped
  4. 3/4 cup diced vidalia onion
  5. 1/2 jalapeño, minced
  6. 1 garlic clove, peeled and minced
  7. 1/4 cup flat-leaf parsley leaves, chopped
  8. 1/4 cup chopped fresh mint leaves
  9. 1/4 cup red wine vinegar
  10. Juice of 2 limes
  11. 1 cup tomato juice
  12. Kosher salt
  13. 1/2 cup crumbled feta cheese, for garnish

Directions

  1. In a blender or food processor, blend all the ingredients (except the salt and feta) together until the desired consistency is reached. Season to taste with salt.
  2. Pour into serving bowls and garnish each with two tablespoons of crumbled feta.
