Sugar-Free Oreos

Ingredients

  1. Cookie
  1. Dry ingredients
    1 3/4 cups oat flour
    1/4 cup unsweetened cocoa powder
    1/2 teaspoon baking powder
    1/4 teaspoon sea salt
  1. Wet ingredients
1/3 cup triple-filtered coconut oil, melted
    1/3 cup cassava sweetener
2 tablespoons unsweetened vanilla almond milk
    1 tablespoon vanilla extract
  1. Filling
1/3 cup coconut butter, slightly melted
1 vanilla bean, seeds scraped out
1 tablespoon unsweetened vanilla almond milk
    3 tablespoons cassava sweetener

Directions

  1. Preheat the oven to 350ºF. Line a baking sheet with a silicon baking mat.
  2. In 2 separate bowls, mix the dry ingredients and wet ingredients. Add the wet ingredients into the dry and mix until fully incorporated. Form the dough into a flat disc and wrap in plastic wrap. Refrigerate for 15 minutes.
  3. Once the dough has been refrigerated, roll the dough to 1/8-inch thick between 2 pieces of parchment paper. Use a 1-inch-round cookie cutter and cut out circles. Using an offset spatula, transfer the cookies onto the silicon baking sheet. Gather the remaining dough and repeat the process until you have no more cookie dough left.
  4. Refrigerate the tray for 10 minutes until the cookies are firm. Bake the chilled cookies for 15 minutes, then allow them to cool completely on the baking sheet.
  5. While the cookies are cooling, make the filling. In a medium mixing bowl, combine the filling ingredients until the vanilla seeds are evenly distributed. Transfer to a quart-size freezer bag.
  6. Once the cookies have cooled, cut off a small corner of the freezer bag and pipe the filling onto half of the cookies. Top with the plain cookies. Enjoy this delectable childhood treat with a glass of almond milk. Happy dipping!
