Utilizing spices and my new found love for roasted chickpeas I took a fun spin on the typical mason jar lunch. Recipe: Ingredients- 1/4 cup riced cauliflower 1 can chickpeas 1 handful spinach 1 tbsp mango chutney 1/2 avocado 1/2 and 1 tsp olive oil 1/2 tsp paprika, onion powder, garlic powder, pepper 1 tsp garam masala, cumin powder, chili powder 1/4 cup toasted almonds (optional) Chickpeas: 1. Preheat oven to 400 2. Line baking sheet with aluminum foil and spread rinsed chickpeas 3. Pour 1 tsp olive oil and garam masala, cumin powder, chili powder over chickpeas 4. Toast for 25 mins then lower to 300 for 15 mins Rice- 1. Steam rice in microwave as directed 2. Pat dry with paper towel 3. Mix in paprika, onion powder, garlic powder, pepper and 1/2 tsp oil olive in mason jar Mason jar by layer- 1. Rice 2. Opt: toasted almonds 3. Chickpeas and mango chutney mixed together 4. Greens 5.
