This Vegan Green Smoothie Bowl Is a Sweet A.M. Indulgence

It's easy to see why By Chloe's vegan fast-casual brunches have become all the rage in NYC and LA — healthy, tasty, and quick are the keywords. But since most of us live too far away to snag a table at one of the restaurant's three coastal locations come Sunday morning, we're bringing you the next best thing and showing you how to whip up one of By Chloe's signature smoothie bowls at home. Chef Manuel Trevino, who is based in NYC but helped open the Silverlake neighborhood outpost in LA, swears by this Green Day Smoothie recipe to keep him full through the restaurant's hectic lunch rush. "It's basically a salad in a smoothie — packed with fresh spinach, avocado, and kale," he tells POPSUGAR, "plus nutrient-dense superfoods like flax seed, coconut water, and almond butter."

INGREDIENTS

    • 1/2 avocado
    • 1 ripe banana
    • 3 strawberries, washed and quartered
    • 1 1/2 cups fresh spinach
    • 1 1/2 cups green kale
    • 1 1/2 cups almond milk
    • 1/2 tbsp. flaxseed meal
    • 1/8 cup almond butter
    • 1 tbsp. maple syrup
    • 1/2 tbsp. agave nectar
    • 1/2 cup coconut water

    INSTRUCTIONS

    1. Add all ingredients to Vitamix or high-powered blender and puree until smooth (about six minutes).

    2. Pour into individual bowls. Top with additional fruit or toppings (optional), and serve immediately.
