Cool Off With Our 250-Calorie Cucumber Avocado Caprese Salad

If your garden (or farmers market) is overflowing with fresh cucumbers, tomatoes, and basil, it's salad-making time! Just add a few more key ingredients, and this fresh and flavorful recipe will be your new favorite Summer dish. And for only 250 calories, it offers 10 grams of protein and over five grams of fiber. Healthy and tasty!

Cucumber Avocado Caprese Salad

Ingredients

2 cucumbers
1 pint cherry or grape tomatoes (about 30)
1 avocado
2 tablespoons chopped fresh basil
1 cup fresh mozzarella (I like to use the little balls)
1 avocado
1 tablespoon extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
Salt and pepper to taste

Directions

  1. Wash, dry, and dice the cucumbers. Wash, dry, and halve the tomatoes. Dice the avocado.
  2. Place the cucumbers, tomatoes, and avocado in a bowl. Add sliced basil and mozzarella. Pour on the oil, vinegar, garlic powder, and salt and pepper. Mix thoroughly.
  3. Enjoy immediately.

This dish will hold better if the cucumbers are sliced lengthwise first and the seeds scraped out. The excess water in the pulp makes it all wilt toooo soon ! Nonetheless, it's a great salad!

My husband planted a ton of cucumbers this year in the garden. \u00a0Of course they are all ready at once. \u00a0So with a huge basket of cucumbers on my counter I knew I needed to take action. \u00a0I was thrilled when I saw this recipe. \u00a0I made it today and I must say I love it! \u00a0So fresh tasting, so light, very refreshing. \u00a0I also tried the crock pot turkey breast recipe so that was dinner. \u00a0Sliced turkey breast, cucumber salad. I'm sure I'll be taking leftovers to work for lunch tomorrow, \u00a0So if you have allot of cucumbers, I highly recommend this recipe. \u00a0ENJOY!

This salad looks extremely yummy and easy to make; which is bonus for one (cough-myself-cough) that enjoys making salads and meals yet dislikes spending 'too' much time cooking.
