Breakfast: Almond Butter Sweet Potato Toast

INGREDIENTS

    • 2 1/4-inch-thick slices of sweet potato (from Day 3 leftovers)
    • 2 tablespoons almond butter
    • 1/2 banana, sliced
    • 2 teaspoons cacao nibs
    • 2 teaspoons unsweetened shredded coconut

    INSTRUCTIONS

    1. Place sweet potato in the toaster until golden and soft, about 2-3 rounds of toasting.

    2. Spread each sweet potato slice with almond butter and sliced banana.

    3. Sprinkle with 1 teaspoon unsweetened shredded coconut and cacao nibs.
