Ingredients

  1. 1 ½ tsp. calcium lactate
    2 cups water
    2 tsp. sodium alginate
    1 cup warm water
    Round ice cube molds

Directions

  1. In a bowl, stir calcium lactate into 2 cups of water until dissolved. Pour into ice cube molds and freeze.
  2. In a small bowl, add sodium alginate and mix with an immersion blender until completely dissolved. Let sit for at least 15 minutes, or until all of the air bubbles are gone.
  3. Remove your ice balls from the mold and carefully add them (one at a time) to the bowl of sodium alginate. Carefully coat the ice ball in the mixture and let sit for several minutes. Using a slotted spoon, carefully lift the ice ball out of the water and let it sit in a bowl of warm water until the ice is completely dissolved. Remove the ball from the water and eat! It's all completely edible.
