Cranberry Almond Breakfast Bars

Homemade Granola Bars: Almond, Chia, Cranberry

Ingredients

  1. 1 cup almond butter
    1/4 cup honey
    1 teaspoon vanilla extract
    1/4 teaspoon cinnamon
    3 cups old-fashioned rolled oats
    1 cup sliced almonds
    1/2 cup dried cranberries
    3 tablespoons chia seeds

Directions

  1. Preheat oven to 350ºF. Spray a 9-inch square pan with canola cooking spray.
  2. Combine almond butter and honey in a heavy-bottomed sauce pan over medium-high flame. Whisk until melted — 3-5 minutes. If your almond butter is really thick, add a little water or canola oil to this mixture to thin it out.
  3. Stir in vanilla and cinnamon.
  4. Add in oats, almonds, cranberries, and chia seeds.
  5. Bake for 15 minutes. Let cool completely and cut into nine equal squares.
