Detox With a Quick Watercress Soup

For a seasonal, detoxifying recipe full of flavor, try a pot of this watercress soup. This peppery, flavorful green is high in vitamins A and C, iron, and fiber, all essential nutrients when you're looking to reboot your system. This is a perfect recipe for anyone who is tired of one pureed soup after another, since the diced potato brings a little extra substance, texture, and protein to your bowl.

Ingredients

  1. 1 tablespoon olive oil
  2. 3 garlic cloves, thinly sliced
  3. 1 large white potato, peeled and cut into 1/2-inch dice (2 cups)
  4. 1 teaspoon coarse salt
  5. 3 cups low-sodium chicken stock
  6. 2 bunches watercress, thick stems trimmed, coarsely chopped
  7. Pepper, freshly ground
  8. Lemon wedges, for serving

Directions

  1. Heat a medium saucepan over medium-high heat. Add oil and garlic, and cook until sizzling and fragrant, about 1 minute. Stir in potato and 1/2 teaspoon salt. Cook 1 minute.
  2. Add stock and 1 1/2 cups of water, and bring to a boil. Reduce to a simmer, and cook for 5 minutes.
  3. Stir in watercress. Return to a boil. Reduce to a simmer for 1 minute. Season with salt and pepper.
  4. Divide among soup bowls, and squeeze a lemon wedge into each bowl. Serve immediately.
