I was faithful to green for a long time but now I’m dabbling in the red! This weekend’s meal prep was Thai red curry noodle jars! These are so tasty and pack a veggie punch! . Mix 1-2 Tbsp of red curry paste (depending on type and preference, I used 2 Tbsp Thai Kitchen) with 1/3 cup coconut milk in the bottom of a mason jar until blended. 30 secs in the microwave helps this along. Add 1/2 cup cubed tofu + 1/4 cup carrots + 1/4 cup red bell pepper (sub other veggies as desired, I use my food processor to finely chop the veggies). On top of that add scallions and cilantro to taste. Top with about 1 oz of vermicelli noodles. When ready for lunch, fill the jar with hot water and mix well. Let steep for a couple minutes to cook the noodles.
