Halloween Quinoa Stuffed Peppers Ingredients: 2 cups cooked quinoa 1 cup organic canned corn kernels ½ cup canned black beans, drained and rinsed ½ cup diced tomatoes ½ cup shredded jalapeno jack cheese 3 tablespoons chopped fresh dill ½ teaspoon cumin 1 teaspoon garlic powder ½ teaspoon onion powder ½ teaspoon chili powder, or more to taste Salt and pepper to taste 4 bell peppers, tops cut and seeded Directions: •Preheat oven to 350 degrees. In a bowl, combine quinoa, corn, beans, tomatoes, cheeses, dill, cumin, garlic, onion and chili powder, salt and pepper. •Spoon the filling into each bell pepper cavity. (reserve a spoon of stuffing mixture for eyes and mouth). Place on baking sheet, cavity side up, and bake until the peppers are tender and the filling is heated through, about 25-30 minutes. •Cut out triangles for eyes and nose and a smile, of you see empty spaces behind eyes, nose or mouth fill in with reserved mixture.
