@thechicpea BLUEZONE MEALS DAY 3 | Nicoyan brunch plate with chipotle bone broth beans, doft scrambled eggs & homemade blue corn tortillas Ingredients: • Black beans, dried and cooked or drained and rinsed from a can • Garlic, sliced • Onion, chopped • 1/2 jalapeno or serrano, finely minced • Chicken bone broth (sub chicken stock) • Chipotle in adobo sauce or chipotle powder • Cumin • Blue Corn Masa Harina - I use Maseca Azul (sub with store bought corn tortillas) • 2-3 eggs • Grass-fed butter • Fresh cut fruit: papaya, dragonfruit • For serving: pickled red onion, sliced avocado, cilantro 1. For your creamy chipotle bone broth beans, sauté onions, garlic and jalapeno in a little olive oil. Once aromatic, add in your cooked and drained beans 2. Pour in bone broth until beans are slightly covered and season with chipotle powder and a little cumin. 3. Let cook on high for a few minutes until the bone broth is reduced and use the edge of your spatula to mash down some of the beans to form a chunky but still creamy bean mixture. Taste for seasoning. 4. For your tortillas, mix 2 cups of blue corn masa and slowly add in 1.5 cups of water and half a tablespoon of salt until a dough forms. Shape dough into several little balls. 5. Use a tortilla press to shape into small tortillas and warm on a pan for 30 seconds to a 1 minute on each side. Place in a cloth in a small bowl and cover to keep warm. 6. If you dont have a tortilla press (like me lol), take some wax paper, place your ball inside, and press down with heavy cast iron pan. Flatten the dough and then carefully peel back. Take a flat spatula and edge around gently until the tortilla comes off and onto your spatula. 7. For your eggs, in a small pot or pan, warm up some grass-fed butter and pour in your scrambled eggs (with a little salt). Whisk with a whisk over low heat for a few minutes until eggs form curdles and then turn heat up to high and cook high and fast for 10-20 seconds. Turn off heat so that eggs are still soft and continue to cook with the residual heat. 8. Prepare your plate: fresh cut fruit, avocado, your corn tortillas, creamy black beans in a bowl and fresh avocado.
