LUNCH TO GO 🏃‍♀️ Inspired by my families dinner last night and the fact I was going to be out hiking, I made this mason jar lunch. Utilizing spices and my new found love for roasted chickpeas I took a fun spin on the typical mason jar lunch. Recipe: Ingredients- 1/4 cup riced cauliflower 1 can chickpeas 1 handful spinach 1 tbsp mango chutney 1/2 avocado 1/2 and 1 tsp olive oil 1/2 tsp paprika, onion powder, garlic powder, pepper 1 tsp garam masala, cumin powder, chili powder 1/4 cup toasted almonds (optional) Chickpeas: 1. Preheat oven to 400 2. Line baking sheet with aluminum foil and spread rinsed chickpeas 3. Pour 1 tsp olive oil and garam masala, cumin powder, chili powder over chickpeas 4. Toast for 25 mins then lower to 300 for 15 mins Rice- 1. Steam rice in microwave as directed 2. Pat dry with paper towel 3. Mix in paprika, onion powder, garlic powder, pepper and 1/2 tsp oil olive in mason jar Mason jar by layer- 1. Rice 2. Opt: toasted almonds 3. Chickpeas and mango chutney mixed together 4. Greens 5. What kind of curry is your favorite? I was faithful to green for a long time but now I’m dabbling in the red! This weekend’s meal prep was Thai red curry noodle jars! These are so tasty and pack a veggie punch! . Mix 1-2 Tbsp of red curry paste (depending on type and preference, I used 2 Tbsp Thai Kitchen) with 1/3 cup coconut milk in the bottom of a mason jar until blended. 30 secs in the microwave helps this along. Add 1/2 cup cubed tofu + 1/4 cup carrots + 1/4 cup red bell pepper (sub other veggies as desired, I use my food processor to finely chop the veggies). On top of that add scallions and cilantro to taste. Top with about 1 oz of vermicelli noodles. When ready for lunch, fill the jar with hot water and mix well. Let steep for a couple minutes to cook the noodles.

Homemade "cup noodles" for lunch- essentially, layer ingredients in a mason jar and add boiling water at lunchtime. These are spicy kimchi beef noodles with green onions, shiitake mushrooms, and radish. Love that tangy cabbage-y kimchi funk.
