Eat Magically Delicious Unicorn Food For Breakfast With These Healthy Vibrant Oats

We are all superbusy people looking for food to eat on the go in the morning or as an afternoon pick-me-up. If you're tired of having the same yogurt cup or granola bar and want to change up your routine, you're in for something great. Purely Elizabeth has just launched a new line of Vibrant Oats that is basically unicorn food . . . in real life!

The brand uses bright antioxidant ingredients to give the oats a beautiful color that may just wake you up — no caffeine necessary. The recipe combines gluten-free oats with quinoa, flax, and chia, and the cups even have a small container of the Ancient Grain Granola on top to add to your oatmeal for a crunch. The new line of Vibrant Oats contains up to eight grams of protein and seven grams of fiber, and the product is gluten-free and vegan. The best part is the oats are lightly sweetened with coconut sugar, so there are no refined sugars.

When we asked Elizabeth Stein, the CEO and founder of Purely Elizabeth, about the inspiration behind launching Vibrant Oats, she told POPSUGAR, "From the beginning, our goal at Purely Elizabeth has been to elevate familiar foods by combining nutrient-rich and superfood ingredients into delicious recipes." And let me tell you, she and her company are certainly elevating oatmeal that can tend to be bland and repetitive by adding turmeric, pitaya, and spirulina. "The latest launch of our Vibrant Oats incorporates trend-forward ingredients in a convenient, accessible, on-the-go, single-serve oatmeal cup," she told us.

Currently, Vibrant Oats is only available online, but it will be available at retailers nationwide soon. Now, the real question is: how do they taste? On to the taste test!

Cue the song "Blue" by Eiffel 65 because these oats are unreal. This flavor gets its gorgeous color from spirulina. Usually spirulina has a really strong taste that may make you want to stay far away from it, but Purely Elizabeth has managed to make it so tasty, with no strange taste left in the mouth. On the health benefits, Stein told us, "Spirulina is high in protein and a good source of antioxidants, B vitamins, calcium, and iron."

Usually when you think of turmeric, you imagine meat stews and curries, but this flavor is changing the turmeric spice game. Surprisingly, this was the best flavor of all the Vibrant Oats, and it might actually be my favorite Purely Elizabeth product. Now that's saying a lot, because if you haven't tried her grain-free granolas, you haven't lived. Stein said, "Turmeric has powerful anti-inflammatory effects and is a very strong antioxidant." Turmeric has also been shown to help improve the skin's appearance, so these oats are definitely number one.

This is the third flavor in the new Vibrant Oats line! If you are ever having one of those days when you just feel in a slump, whip up a batch of the raspberry pitaya oats — it's a guarantee you'll feel on your A game again. Your insides want to feel pretty in pink too, so what are you waiting for? When asked why she chose pitaya as one of three superfoods to use, Stein shared, "Pitaya is rich in antioxidants, vitamin C, polyunsaturated (good) fatty acids, and several B vitamins, which aid in increasing metabolism, as well as carotene and protein."

If you're looking to get creative with the Strawberry Pitaya Oats and satisfy your sweet tooth, you have to try this! All you need to do is melt half of a frozen pitaya smoothie packet and combine it with chia seeds. Then prepare the oats according to the directions on the cup. Next, add your favorite yogurt, the granola topper, and fresh fruit for this beautiful and delicious treat. I'm pretty sure this is what unicorns eat.
