Rye toast, Dijon, scrambled eggs, and a sprinkle of chives: What could be better than this?!? Turkey Taco Skillet: Ground turkey cooked with chili powder, cumin, tomato sauce & garlic. Stir in torn up charred corn tortillas, top with avocado, salsa, sour cream, sliced radishes, cotija cheese, cilantro, and a big squeeze of lime. (Sub ground beef if ya want, of course!) ❤️

A to-go sandwich that's so good, you'll want "to go" somewhere just so you can take it. Or something. Grill zucchini, bell pepper, and onion slices, let them cool, spread herbed cream cheese on toasted bread, layer the veggies between two slices. Wrap in plastic and keep in the fridge overnight, then grab it on your way out the door the next day! Magic happens in that fridge. What a sandwich! And so simple.

Hot Corn Dip! Grill 5 ears of corn, shave it off the cob (into a bundt pan to avoid mess), combine kernels in a mixing bowl with 8 oz cream cheese, 1/2 cup mayo, 1/2 cup sour cream, 2 cloves minced garlic, 1/2 diced red onion, 1 diced red bell pepper, 1 diced green bell pepper, 1 seeded diced jalapeño, 2 sliced scallions, 1 pound grated Monterey Jack (reserve 1/3 to sprinkle on top), and a cup of diced roasted green chilies. Spread in a pan, sprinkle with chili powder, bake for 20-22 minutes at 350, and serve with chips! So delicious, and serves a bunch. 🌽

Make a vinaigrette, cut up carrots, roast 'em with a little olive oil and salt, drizzle on the vinaigrette, and serve! Utterly delightful side dish. I'm making this and a couple of other make-ahead wonders on my show this morning. See you in 21.7726444829 minutes!

Throw shrimp onto a rimmed sheet pan with cherry tomatoes and thinly sliced garlic. Drizzle on olive oil, sprinkle with salt and pepper, and toss! Bake at 400 for about 12 minutes, until tomatoes start to burst. Squeeze on lemon juice and serve! (With a salad...over pasta...on a hoagie roll...) 🦐

Mini Meatball Pasta Bake ready to go in the oven! Small meatballs (ground beef, Italian sausage, oats, egg, Parmesan, s&p, parsley) cooked in tomato sauce with basil, layered with cooked ziti, and chunks of fresh mozzarella. I'll cover it with foil before baking to keep everything luscious, and I can't wait to EAT IT!

Last recipe for my cookbook (uh...I think), but I won't make you wait: Chicken legs, lemon, garlic cloves, salt, and pepper. 400 degrees for 40-45 minutes, shaking the pan along the way. Lip-licking lusciousness! Just had it for lunch. 😋
