Avocado Taco Bowl

Ingredients

  1. 2 tablespoons vegetable oil
    ¼ red onion, small dice (about ¾ cup)
    ¼ bell pepper, small dice (about ¼ cup)
    ½ pound lean ground turkey
    1 tablespoon tomato paste
    1 tablespoon chili powder
    1 tablespoon garlic powder
    1 teaspoon salt
    ½ can black beans, drained
    ¼ cup corn
    ½ cup water
    ½ cup tomato, small dice
    ½ cup lettuce, shredded
    5 avocados
    7 tablespoons low-fat Mexican cheese
    Cilantro, for garnish

Directions

  1. Add oil to a sauté pan and heat to medium high. Add 1/2 cup onion (reserving the rest) and bell pepper; sauté until onions are translucent (2-4 minutes).
  2. Add turkey, tomato paste, chili powder, garlic powder, and salt. Sauté until turkey is cooked through (3-5 minutes), stirring frequently.
  3. Add black beans, corn, and water. Cook until water is mostly evaporated (5-7 minutes).
  4. Remove from heat and add tomatoes and lettuce and remaining 1/4 cup onion.
  5. Halve the avocados, removing the pits. Spoon some of the turkey filling into each one.
  6. Top with cheese and cilantro.
