Pumpkin Pie Pudding


  1. 1 large ripe avocado
  2. 1/2 cup canned pumpkin
  3. 1/2 package silken tofu
  4. 4 dates
  5. 1 tablespoon maple syrup
  6. 1 teaspoon pumpkin pie spice
  7. Pinch of fine sea salt


  1. Mix everything in a food processor until smooth, several minutes.
  2. Divide between four dishes, top with a dollop of yogurt, coconut whipped cream, chocolate chips, granola, or chopped pecans, and enjoy!
  3. If you're not eating it right away, chill in the fridge in a sealed container.
