If you remember creamy Fudgsicles when you were a kid, here's a healthier version made without high fructose corn syrup or added sugar. Plus you won't find a drop of dairy in these frozen treats.
For an added sweet bonus, these homemade fudgsicles are filled with fresh strawberries — the perfect complement to the chocolatey goodness. And even better news? Each one is under 80 calories.

1 cup chocolate soy milk (I used Silk)
1/4 cup raw, unsalted cashews
8 strawberries, sliced
- Place all the ingredients except for the strawberries in a blender and mix until smooth.
- Fill six large popsicle molds three-quarters full with the chocolate mixture. Add a tablespoon or so of sliced strawberries to each mold and fill with remaining chocolate mix.
- Place the sticks in the molds and freeze for several hours or until completely frozen.
Makes six popsicles.
