It's pumpkin spice everything season, and if you follow a Paleo diet, it's pretty depressing. There are no Starbucks drinks to be had because that PSL syrup contains dairy. And the pumpkin Halo Top flavor that everyone around you is obsessing over? Nope. But thanks to Birch Benders and its amazing line of pancake and waffles mixes, I will be having pancakes this season, and they will be pumpkin spiced!
When I first got my hands on this Paleo pumpkin spice pancake mix, I was apprehensive. Most Paleo pancakes aren't great — they're dry or gritty and bordering on cardboard caked in syrup. The fact that all you have to do with this mix is add water made me even more apprehensive. But holy damn — these are so, so good.
In total, it took me all of five minutes to make. The pancakes are light and fluffy and full of pumpkin spice goodness. The flour base is made from cassava starch and coconut and almond flour, and the subtle sweetness comes from monk fruit, pumpkin, and the spices. Biting into them is so fulfilling, it's hard to believe these pancakes are grain-, gluten-, and sugar-free. Added bonus: they also have a decent amount of fiber and protein per two-pancake serving.
