If you love apple crisp, this recipe has half the sugar and is lower in calories and fat. The peaches are sweet enough — you won't even miss the sugar! This peach crisp tastes delicious on its own or served with a dollop of whipped coconut cream or homemade, sugar-free berry banana nice cream.
- 4 cups peaches (about 5 to 6 fresh or a 16-ounce bag frozen)
1/4 cup chopped dates or raisins
1 1/2 cup rolled oats
1/4 cup white whole-wheat flour (or substitute a gluten-free flour like oat flour)
1/4 cup chopped pecans
1 teaspoon ground cinnamon
1/3 cup unsweetened applesauce
2 tablespoons creamy almond butter
3 tablespoons maple syrup
- Preheat oven to 350ºF. Lightly spray a 9x6- or 8x8-inch pan with cooking spray.
- Add the peaches to the prepared pan.
- In a medium bowl, mix together the dates or raisins, oats, flour, pecans, cinnamon, applesauce, almond butter, and maple syrup.
- Spread the oat mixture evenly over the peaches.
- Bake for 40 to 50 minutes, or until the fruit is bubbling and the top is golden brown.
